Prep time: 5 minutes
Chill time: 4 hours (preferably overnight)
Ingredients
¼ cup (60ml) canned coconut milk
¾ cup (180ml) almond milk or coconut milk from a carton
¼ cup (41g) chia seeds
1 tbsp (15ml) maple syrup
1 tsp preservative-free vanilla extract
Method
1. Mix the ingredients
Add the canned coconut milk, almond milk or carton coconut milk, chia seeds, maple syrup and vanilla extract to a mason jar or container of your choice.
2. Shake
Secure the lid and give everything a good shake until well combined.
3. Chill
Place the jar in the fridge for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a creamy pudding consistency.
4. Enjoy!
Once chilled and set, give it a quick stir and enjoy your creamy chia seed pudding!
