
Cosy season is back and we've already started baking! Jade's low histamine apple bread is the perfect sweet treat for breakfast, a snack or something sweet with your afternoon coffee.
Makes: 8 - 10 servings

Ingredients
For the apple mixture:
- 1 tbsp (14g) coconut oil
- 1 large Gala apple, peeled and thinly sliced
- 2 tbsp (30ml) maple syrup
- 1 tbsp (10g) maple sugar
For the bread mixture:
- 3 large free-range eggs
- ½ cup (125g) apple sauce
- ½ cup (120ml) maple syrup
- ½ cup (120ml) coconut or almond milk
- 2 tbsp (25g) coconut oil, melted
- 2 tsp (10ml) preservative-free vanilla extract
- 1 cup (95g) almond flour
- ½ cup (65g) tapioca flour
- 1 tsp baking soda
- Pinch of sea salt
Method
1. Prepare the oven
Preheat the oven to 175°C (350°F). Line a 9 x 5-inch baking pan with greaseproof baking paper.
2. Cook the apples
Melt the coconut oil in a pan over medium heat, then add the sliced apple.
Add the maple syrup and maple sugar, and cook for around 7 minutes, stirring frequently, until the apples begin to soften.
3. Make the bread mixture
While the apples are cooking, add the eggs, apple sauce, maple syrup, coconut or almond milk, melted coconut oil and vanilla extract to a large bowl. Mix until combined.
In a separate bowl, combine the almond flour, tapioca flour, baking soda and sea salt.
Add the flour mixture to the wet ingredients and mix until fully combined. A hand mixer makes this easier!
4. Layer the bread
Pour half of the bread mixture into the prepared baking pan.
Add half of the cooked apple mixture on top, followed by the remaining bread mixture. Finish with the remaining apple mixture on top.
5. Bake
Bake for around 40 minutes, or until a toothpick inserted into the centre comes out clean.
Allow the bread to cool before slicing and serving.
